While in Naga, a friend of mine recommended a bakery serving delicious Pancit Bato – Casa Moderna. This local joint has been a pillar of Bicolano breads and noodles having established quite a number of branches including in food-courts of popular malls in Naga such as SM and Puregold. Since our lodging is at downtown Naga, we were able to come across one of their stand-alone branches at Elias Angeles St.
Casa Moderna is using the flat variety of Pancit Bato noodles (also known to some Bicolanos as Pancit Lapad) cooked with generous amounts of pork, carrots, onions, cabbage and topped with two huge pieces of succulent Lechon Kawali. They do not serve solo orders but their platter good for 2-3 persons is affordably priced at only Php.155. Their concoction is more on the salty side as both the noodles and the crispy pork are both very flavorful but a sprinkle or two of calamansi would easily balance out this recipe.
I can say that this dish is one of the highlights of this Bicol trip! Side note though, upon ordering, please ask the server for their “Pancit Guisado” as in this region, Pancit Guisado refers to their local Pancit Bato much as the same with Ilonggos referring to their Efuven as Pancit Guisado and us Manilenos referring to Pancit Bihon or Canton as our understanding of “Pancit Guisado”.
